Trying to keep this medieval.
What if we could build hot air balloons.
You could build vehicles or a floating platform/house.
The more blocks you added the better balloon you'd need.
These balloons would be made out of cloth (4x4 of wool) and string.
also if you went high enough you could start finding colored/minable clouds.
starting with normal aerocloud and ending with the rarest aerocloud.

A balloon that is attached to you that lifts you up in the air might be possible. But it would only lift you up, the same way as if you jump.
