When I have saturation on my foodbar, the health, armor and breath bars also get tinted the same color. Colors fix themselves when I'm out of saturation.

Player heads cannot be obtained naturally (they must be spawned in) unless there's a mod on the server that allows player heads to drop from pvp deaths (which I haven't heard of). Hope this helps.
